Don't mind if I do, take a sip or two.


Don't mind my long post title, I am in a rhyme-y (is that even a word) mood. Summer sips, as I like to call them, are festive and colorful fruity drinks that look as delicious as they taste.  The other day I decided to try my hand at two different summer sips. A strawberry lemonade (Emeril Lagasse style) and a mint & seltzer water mix. They were so d-lish, thus inspiring my post!! Now, I don't drink alcohol but you can definitely make them with your favorite mix to beat the heat.  Hope these pictures makes you want to run out there and make your very own summer sip!!  Enjoy!!

A bag of lettuce

I adore salads!!  I am a salad junkie, always have been and always will be. I used to eat salads non-stop as a little girl and loved every bite.  Today, I don't eat as much as I would like but I do enjoy my salad when I make one.

However, I am not into "fancy" salads meaning. I love plain and simple green salads with a bunch of vegetables. I don't really do the croutons, cheese, eggs or "fancy" items. I love romaine/spinach leaves with a bunch of legumes and yummy veggies.

Summertime is a perfect time for salads, there is an abundance of fresh vegetables so your possibilities are endless.

Chicken, we are at it again.


So a couple of days ago I talked about this.  Saw this. And made my own version.

Man, I tell you really have to get creative with chicken when you eat it like a hundred times a week. 
I wanted to follow the original recipe, however, I had to improvise because I didn't have all the ingredients on hand.  If you wish follow, the recipe for the seasonings, but I wanted to do it based off my own preferences.

This is my version of creativity:

Panko Bread Crumbs: 1/2 cup
Egg white: 1 egg
Garlic Powder (as desired or recipe)
Cottage Cheese: 1/4  cup
Feta Cheese (as desired or recipe) I used a small slice
Red Bell Peppers: 1 roasted bell pepper. 10 min on high broil
Salt (as desired or recipe)
Pepper (as desired or recipe)
Lemon: 1 tbs


Basil (as desired or recipe) I used 3 leaves chopped

Outside crust:  Panko, Egg white and garlic powder
Chicken stuffing: Roasted red bell pepper, cottage cheese, feta cheese & all remaining seasonings.

Bake @ 350 degrees for about 45 minutes. 


The final product was a little bit dry for my taste, however, I will try this again and bake it for less time. All in all not bad.

When on the go...

Just a quick and simple post for y'all today.  I don't know about you but I love iced coffee..a lot of times I will let my coffee pot sit out for the rest of the day just so I can enjoy an iced coffee the next morning-YUM!! Check out my favorite coffee brands here and here.

This isn't new, it's not rocket science and I am probably SOOOO behind with the rest of society but man have I found a fabulous product that you must try if you love iced coffee as much as I do...

oh man is this d-lish!!! And so simple to make, almost too simple  ;)  I still will make my regular coffee and let it sit out for an iced version. However, when I am on the go, these are perfect.

Chicken Bake

Chicken is a hard food to make. I am not necessarily saying it's hard to cook, no what I mean is that it's hard to figure out what kind of chicken dish to make.

First there are so many different recipes out there that it can be overwhelming and second chicken can be a boring meat to work with that sometimes you want to give up all together and order in. 

I'll make it simple:

Chicken
Potatoes
Onions
Garlic
Tomato Sauce plus fresh tomatoes
Seasonings

All equal a chicken bake. No measuring, had some extra baked chicken on hand and 2 potatoes.

Get your fresh fruit here...

Welcome back!! Yes, I am welcoming myself back to my own blog...why not? I can hear the music playing in the background...pomp and circumstance all right. Ha Ha...just kidding.  Anyways, I am going to go ahead and start off with my Inspiration Monday because well, we all could use a little inspiration and as usual, why not start the week off on the right foot.

I know that summer is quickly approaching and we tend to eat lighter in the summer months.  Fresh fruit is in abundance at the farmers market during the summer, so it's typically easy to find what you want.  It's always a good idea to buy and freeze so that you can enjoy fresh fruit through the fall & winter months.
